Beef and Broccoli Stir-Fry

Ingredients:
1/4 tsporange rind, grated1 mL
1/4 cuporange juice60 mL
1 tspfresh ginger, grated5 mL
1 garlic clove, minced1
2 tbspsoy sauce30 mL
1/2 tspcornstarch2 mL
1 tbspvegetable oil15 mL
1 lbbagged broccoli slaw454 g
6 ozSchneiders 1890 Heritage® Roast Beef slices, cut in thin strips175 g
OR
Schneiders Deli Best® Roast Beef slices, cut in thin strips
1 medium tomato, cut in 8 wedges1
1 tbspfresh basil, chopped, for garnish15 mL


Directions
For sauce, combine orange rind and juice, ginger, garlic, soy sauce, and cornstarch; set aside. In large skillet heat oil over medium-high heat; cook and stir broccoli slaw for 2 minutes. Add roast beef and sauce, cook and stir 3-4 minutes or until broccoli is tender crisp. Stir in tomato and heat through. Arrange on plates and garnish with fresh basil.

TIP: Purchase prepared broccoli slaw in packages in the produce department. Substitute packaged coleslaw if broccoli slaw is not available.
