Bacon Wrapped Scallops

We’ve given this classic appetizer a bit of a twist. A little hint of heat from a simple spice rub compliments the richness of the meats so well. Serve these with sparkling wine, or a very dry Riesling.



2 tbsp (30 mL) Paprika

1 tsp (5 mL) Salt

2 tsp (10 mL) Onion powder

2 tsp (10 mL) Garlic powder

2 tsp (10 mL) Black pepper

2 tsp (10 mL) Thyme

2 tsp (10 mL) Oregano

½ tsp (2 mL) Cayenne pepper


12 slices Schneiders® Bacon

12 Large fresh scallops, patted dry

Preheat oven to 375°F (190°C)

Mix together all the spice rub ingredients and set aside

Lay bacon slices on a parchment-lined baking sheet and cook in preheated oven for about 10 minutes or until just beginning to brown. Remove from oven to cool slightly

Wrap each scallop in a slice of bacon and secure with a toothpick. Place on a parchment lined baking sheet and sprinkle both sides liberally with spice rub

Bake in preheated oven for 8 to 10 minutes or until the bacon is crisp and the scallops are firm and opaque
