Bacon Pepper Poppers

The smell of these poppers in the oven will blow your mind. Gooey cheese, crisping bacon, jalapeno spice, all basting the savoury Pepperette morsels. The hardest part about this recipe? Waiting for them to cool a bit before you eat them.


5 Jalapeno peppers

1/2 cup (125 mL) Herb and garlic cream cheese

1/2 cup (125 mL) Monterrey Jack cheese, grated

1/2 tsp (2 mL) Smoked paprika or chipotle pepper powder

1/4 cup (60 mL) Green onion, minced

5 Pepperettes, cut in half

10 slices Bacon

Preheat oven to 425°F (220°C)

Slice jalapenos lengthwise and remove the seeds and membrane

Mix the cream cheese, Monterrey jack cheese, smoked paprika and onion. Divided the mixture evenly between the jalapeno pepper halves and top with half a pepperette. Tightly wrap a slice of bacon around each stuffed pepper

Place on a parchment paper lined baking sheet and bake for 25-30 minutes or until the bacon is crisp and brown
