    • 8 Medium vine-ripened tomatoes
    • 6 Large eggs
    • 1/2 tsp (2 mL) Schneiders® Oktoberfest® Mustard
    • 1 cup (250 mL) Grated Parmesan cheese
    • 6 Slices Schneiders® Country Naturals Ham, diced
    • 1 Small red onion, finely diced
    • 1 Small green pepper, finely diced
    • 1/2 cup (125 mL) Finely sliced white mushrooms
    • Freshly ground black pepper
    • 1/2 tsp (2 mL) Salt
    • 2 tbsp (30 mL) Chopped fresh basil, plus additional for garnish

  • Directions

    REMOVE core from tomatoes and scoop out flesh and seeds with a small spoon. Place tomatoes on microwave safe plate; set aside. COMBINE remaining ingredients in a medium microwave safe bowl. MICROWAVE egg mixture on medium-high for 5-7 minutes, stirring every 2 minutes or until mixture reaches the consistency of soft scrambled eggs. FILL tomatoes with egg mixture and microwave for approximately 3 minutes or until tomatoes are warm and slightly soft. Garnish with fresh basil leaves. Serve immediately. TIP: Substitute Country Naturals with your favourite Schneiders® sliced meat.
